Method

Preparing the Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the whole milk, egg, and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if the batter is a bit lumpy.

  4. 4

    Chill the Dough

Cover the bowl with plastic wrap and refrigerate the batter for at least 30 minutes to allow the flavors to meld and the dough to firm up.

Frying the Beignets

  1. 5

    Heat Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature.

  2. 6

    Fry the Beignets

Using a spoon or small ice cream scoop, drop tablespoon-sized amounts of the chilled dough into the hot oil. Fry in batches, making sure not to overcrowd the pot.

  3. 7

    Cook Until Golden Brown

Fry the beignets for about 2-3 minutes on each side or until they are golden brown and puffed up. Use a slotted spoon to remove them from the oil and drain on paper towels.

Finishing Touches

  1. 8

    Dust with Powdered Sugar

While the beignets are still warm, generously dust them with powdered sugar using a sieve or sifter.

  2. 9

    Serve Warm

Serve the beignet bites warm and enjoy immediately for the best texture and flavor.
