Preparation

  1. 1

    Make the Pie Crust

Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom and up the sides of a pie dish. Bake for 8-10 minutes until lightly golden. Let it cool.

  2. 2

    Prepare the Filling

In a saucepan over medium heat, combine milk, sugar, and cornstarch. Stir constantly until it thickens. In a separate bowl, whisk the egg yolks. Gradually add the hot milk mixture to the yolks, whisking continuously. Pour the mixture back into the saucepan and cook for an additional 2-3 minutes. Remove from heat, then stir in the vanilla and butter. Allow it to cool slightly.

  3. 3

    Slice the Bananas

Slice the ripe bananas and layer them on the bottom of the cooled pie crust.

  4. 4

    Assemble the Pie

Pour the banana cream filling over the sliced bananas in the pie crust. Spread evenly and refrigerate for at least 4 hours or until set.

  5. 5

    Make the Whipped Cream Topping

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread over the chilled pie.
