Prepare the Pork
Preheat your oven to 400°F (200°C). In a small bowl, mix olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the pork tenderloin.
Roast the Pork
Place the pork tenderloin on a baking sheet and roast in the preheated oven for about 20-25 minutes or until the internal temperature reaches 145°F (63°C). Let it rest for 5 minutes before slicing.
Prepare the Salad
While the pork is roasting, in a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado. Toss gently to mix.
Assemble the Bowl
Slice the rested pork tenderloin and place it on top of the salad mixture. Drizzle with your favorite dressing if desired, or serve it plain.
