Vanilla Cake (bake and cool)

Prep
Preheat the oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper; grease the sides.

Dry ingredients
In a medium bowl, whisk together 1.5 cups all-purpose flour, 1 cup granulated sugar, 1.5 tsp baking powder, and 0.5 tsp salt until evenly combined.

Cream butter
In a separate large bowl, beat 0.5 cup room-temperature unsalted butter with an electric mixer on medium speed until smooth and slightly fluffy, about 1–2 minutes.

Lemon Mousse Filling

Bloom gelatin
Sprinkle 1 tsp unflavored gelatin over 2 tbs cold water in a small bowl and let sit 5 minutes to bloom.

Make lemon curd base
In a heatproof bowl set over (not in) simmering water (double-boiler), whisk together 0.5 cup fresh lemon juice, 1 tbs lemon zest, 0.5 cup granulated sugar, and 3 egg yolks until smooth. Cook, stirring constantly, until mixture thickens and reaches about 170–175°F (it should coat the back of a spoon) — about 6–8 minutes.

Finish curd
Remove the bowl from the heat. Add the 2 tbs cold cubed butter a piece at a time, whisking until fully incorporated and smooth. Add the bloomed gelatin and whisk until dissolved. Transfer the lemon curd to a clean bowl and let cool to room temperature, stirring occasionally so it cools evenly (about 15–20 minutes).

Whip cream
While the lemon curd cools, chill a mixing bowl and whisk or beaters for 10 minutes in the refrigerator if possible. Pour 1 cup cold heavy cream with 1 tbs confectioners' sugar into the chilled bowl and whip on medium-high speed until soft peaks form (do not overwhip).

Fold mousse
When the lemon curd is cooled to room temperature but still pourable, gently fold about one-third of the whipped cream into the curd to lighten it. Then fold in the remaining whipped cream in two additions until the mixture is homogeneous and airy. Taste and adjust lemon if desired (add a scant 1/4 tbs lemon juice if more brightness is needed). Chill the mousse in the refrigerator for 15–20 minutes to firm slightly before assembly so it holds shape.

Prepare crumbs
Stir together 1 cup graham cracker crumbs and 2 tbs melted butter in a small bowl until evenly moistened. Set aside.

Level cake
If the cake has a dome, level the top with a serrated knife so you have a flat surface for filling. If you baked two layers, split them horizontally or use each as-is for a two-layer cake.

Fill cake (single-layer, sandwich or mousse ring)
For a single-layer cake: If you want a visible mousse layer, slice the cooled cake horizontally to create two thin layers. Place the bottom layer on a cake board or serving plate. Spread or pipe an even layer of lemon mousse (about half of the mousse) onto the bottom cake layer to within 1/4 inch of the edge. Top with the second cake layer and press gently to adhere. For a two-layer assembly: place one layer, spread mousse between layers, then top with the second layer.

Coat sides with crumbs
Apply a thin layer of leftover mousse or lightly brush the sides with a little water and press the graham cracker crumb mixture evenly around the sides of the assembled cake so crumbs adhere. If crumbs won't stick well, chill the cake 10 minutes to firm the mousse, then apply crumbs.

Top & chill
Smooth the top of the cake with an offset spatula. Place the lemon drop candies or 4 small spoonfuls of lemon curd decoratively on the center top. Dust lightly with 1 tsp powdered sugar if desired. Chill the assembled cake in the refrigerator for at least 1.5–2 hours to let the mousse fully set (longer for a firmer texture, up to 4 hours).

Serve
Remove the cake from the refrigerator 15 minutes before serving for easier slicing. Slice with a sharp knife dipped in hot water and wiped dry between cuts for clean slices. Store refrigerated for up to 3 days.
