Clean and slice

If not pre-cleaned, remove head, cartilage, and innards from squid tubes; rinse well. Pat tubes and tentacles dry with paper towels. Slice tubes into 1/2-inch rings; leave tentacles whole or halved if large.

Season & soak

Place sliced calamari in a bowl. Sprinkle with 1 tsp sea salt and 1 tsp freshly ground black pepper, then pour 1 cup buttermilk over the calamari. Squeeze juice of half the lemon into the buttermilk and stir to combine. Cover and refrigerate for 20–30 minutes (buttermilk tenderizes and helps batter adhere).

Prepare dry mix

In a shallow wide bowl or rimmed baking sheet, whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1/2 cup semolina or panko (if using), 1/2 tsp baking powder, 1 tsp sweet paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1/4 tsp cayenne, 1 tsp salt, and 1/2 tsp freshly ground black pepper until evenly combined.

Make egg wash (optional)

In a separate shallow bowl, beat 1 large egg with 2 tbsp cold water until smooth. This step is optional — use it if you prefer a thicker, more uniform coating. If skipping, proceed directly from the buttermilk soak to dredging in the dry mix.

Dredge the calamari

Remove calamari from buttermilk in batches, letting excess drip off. For a lighter coating: dredge directly in the dry mix until well coated, shaking off excess. For a thicker coating: dip each piece briefly in the egg wash, then press into the dry mix, ensuring an even coat. Place coated rings on a wire rack and let sit 5–10 minutes to set the crust.

Frying

Heat oil

Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep-fryer (oil depth ~2–3 inches). Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of the dry mix into oil — it should sizzle and rise steadily without browning instantly.

Fry in batches

Work in small batches so the oil temperature remains steady. Gently lower a handful of coated calamari into the hot oil using a slotted spoon or spider. Fry 1 to 1 1/2 minutes until golden brown and crisp. Avoid overcooking — calamari cooks very fast and becomes rubbery if left too long. Remove with a slotted spoon and transfer to a paper towel-lined tray or a wire rack set over a sheet pan to drain. Lightly season with a pinch of salt immediately after frying.

Finish remaining batches

Repeat frying with remaining calamari, allowing the oil to return to temperature between batches. If oil temperature drops, increase heat slightly but monitor carefully.

To serve

Transfer fried calamari to a serving platter. Sprinkle with chopped fresh parsley and serve immediately with lemon wedges and marinara or tartar sauce on the side. For best texture, serve within 10 minutes of frying.
