Preparation

    Soak and Prepare Beans

    If using dried cannellini beans, soak them overnight in water. Drain and rinse before cooking. If using canned beans, rinse and drain them before use.

    Chop Vegetables

    Chop the onion and mince the garlic. Set aside for cooking.

Cooking

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Add Beans and Tomatoes

    Stir in the cannellini beans and diced tomatoes, including their juices. Add salt, black pepper, and dried oregano. Bring the mixture to a simmer and cook for about 10 minutes, allowing flavors to meld.

    Cook Pasta

    In a separate pot, bring salted water to a boil. Add fresh pasta and cook according to package instructions until al dente. Drain the pasta, reserving a small cup of pasta water.

    Combine Pasta and Sauce

    Add the cooked pasta to the pot with beans and tomatoes. Toss gently to combine, adding a splash of reserved pasta water if needed to loosen the sauce.

    Finish with Herbs and Cheese

    Stir in the chopped fresh basil and half of the grated Parmigiano-Reggiano. Adjust seasoning with salt and pepper as needed.

Serving

    Serve the Dish

    Serve hot, garnished with the remaining grated Parmigiano-Reggiano and a sprinkle of fresh basil.
