Cooking Pasta

    Boil Water

    In a large pot, bring water to a boil. Once boiling, add a pinch of salt.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package directions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

    Drain Pasta

    Once cooked, drain the spaghetti in a colander and set aside. Reserve 1/2 cup of pasta water for later use.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, clean and chop the zucchini and mushrooms into bite-sized pieces. Halve the cherry tomatoes.

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the zucchini and mushrooms and sauté for about 5 minutes until they start to soften.

    Add Spinach and Tomatoes

    Add the fresh spinach and cherry tomatoes to the skillet. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes soften.

    Mince the roasted garlic cloves and stir them into the vegetable mixture. Cook for an additional minute to combine flavors.

Combining and Serving

    Combine Pasta and Vegetables

    Add the drained spaghetti to the skillet with the vegetables. Toss everything together, adding a little reserved pasta water if needed to keep it moist.

    Season with salt, black pepper, and dried oregano. Toss well to combine.
