Cooking the Pasta

Boil the Water
Fill a large pot with water and add salt. Bring it to a boil over high heat.

Cook the Spaghetti
Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually around 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of pasta water. Then drain the spaghetti in a colander.
Making the Sauce

Cook the Pancetta
In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.

Prepare the Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Spaghetti and Pancetta
Add the drained spaghetti to the skillet with the cooked pancetta. Toss well to combine.

Plate the Carbonara
Serve immediately, garnished with additional Parmesan cheese and a sprinkle of black pepper if desired.
