Method

Cooking the Pasta

  1. 1

    Boil the Water

Fill a large pot with water and add salt. Bring it to a boil over high heat.

  2. 2

    Cook the Spaghetti

Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually around 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the spaghetti, reserve about 1 cup of pasta water. Then drain the spaghetti in a colander.

Making the Sauce

  1. 4

    Cook the Pancetta

In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.

  2. 5

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

  1. 6

    Combine Spaghetti and Pancetta

Add the drained spaghetti to the skillet with the cooked pancetta. Toss well to combine.

  2. 7

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  1. 8

    Plate the Carbonara

Serve immediately, garnished with additional Parmesan cheese and a sprinkle of black pepper if desired.
