Preparing the Sauce

    Cook the Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic (4 cloves) and sauté until fragrant, about 1 minute.

    Add 28 oz of canned crushed tomatoes, 1 teaspoon of oregano, and 1 cup of fresh basil to the pan. Stir well and let simmer for 15-20 minutes, stirring occasionally.

Preparing the Chicken/Veal

    Set Up Breading Station

    Set up three bowls: one with 1 cup of all-purpose flour, one with 2 beaten large eggs, and one with 2 cups of breadcrumbs mixed with 1 cup of grated Parmesan cheese, 1 teaspoon of salt, and 1 teaspoon of black pepper.

    Bread the Chicken/Veal

    Dredge each piece of chicken or veal chop first in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture. Ensure even coverage.

Cooking the Chicken/Veal

    In a large skillet, heat oil over medium-high heat. Once hot, add the breaded chicken or veal chop and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

    In a baking dish, spread a layer of the prepared tomato sauce, place the fried chicken or veal on top, add another layer of sauce, and top with sliced fresh mozzarella.
