Preparation of Mussels

    Clean the Mussels

    Rinse the fresh mussels under cold water, scrubbing the shells to remove any debris and beards. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and chopped shallots. Sauté until softened and fragrant, about 3 minutes.

    Add Liquids and Seasoning

    Pour in the white wine and crushed tomatoes. Add thyme, bay leaves, red pepper flakes, salt, and black pepper. Stir to combine.

    Cook the Mussels

    Increase the heat to medium-high and add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Finish with Herbs

    Once the mussels are cooked, remove from heat and stir in chopped fresh parsley. Remove bay leaves before serving.

Preparation of Jersey Baguette

    Prepare the Baguette

    Preheat the oven to 375°F (190°C). Slice the Jersey baguette in half lengthwise.

    Butter the Baguette

    In a small bowl, mix softened butter with garlic powder. Spread the garlic butter mixture evenly on the cut sides of the baguette.

    Bake the Baguette

    Place the buttered baguette halves on a baking sheet and bake in the preheated oven for 10-12 minutes, or until golden and crispy.

    Garnish

    Once baked, remove from the oven and sprinkle with fresh parsley for garnish.
