Preparation of Gelato Base

    Whip the Cream and Milk

    In a large mixing bowl, combine the heavy cream and whole milk. Whisk them together until combined.

    Mix Sugar and Egg Yolks

    In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is thick and pale.

    Combine Mixtures

    Gradually pour the milk and cream mixture into the sugar and egg yolk mixture, whisking continuously to prevent the eggs from scrambling.

    Heat the Mixture

    Pour the combined mixture into a saucepan and heat over medium-low heat. Stir continuously until the mixture thickens enough to coat the back of a spoon (about 170°F or 77°C).

    Add Vanilla

    Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

Making Flavor Variations

    When the base is chilled, stir in chocolate syrup until well combined. Proceed to churn.
