Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C) to ensure it is hot enough for roasting the salmon.
- 2
Prepare the Garlic
Peel the garlic cloves and finely chop them. Set aside.
- 3
Chop the Herbs
Finely chop the fresh parsley and thyme. Combine them in a small bowl with the chopped garlic.
- 4
Prepare the Lemon
Zest the lemon and then cut it in half. Squeeze the juice from one half into a mixing bowl, and reserve the other half for garnish.
Marinating the Salmon
- 5
Mix the Marinade
In the mixing bowl, combine the chopped garlic, parsley, thyme, lemon juice, extra virgin olive oil, salt, and pepper. Stir well to create a marinade.
- 6
Marinate the Salmon
Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure that each fillet is well-coated. Let it marinate for at least 15 minutes.
Roasting the Salmon
- 7
Arrange the Salmon
Line a baking sheet with parchment paper. Place the marinated salmon fillets skin-side down on the prepared baking sheet.
- 8
Roast the Salmon
Place the baking sheet in the preheated oven and roast the salmon for about 15-20 minutes, or until the salmon flakes easily with a fork.
Serving
- 9
Garnish and Serve
Once roasted, remove the salmon from the oven. Garnish with lemon zest and serve with lemon wedges on the side.
