Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in all-purpose flour, shaking off the excess flour.
Cooking
- 2
Brown the Chicken
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

Make the Sauce
Pour in the sweet Marsala wine and scrape the bottom of the skillet to deglaze. Allow it to simmer for about 2 minutes. Add the chicken broth, dried thyme, and adjust seasoning with salt and black pepper as needed. Stir to combine.

Combine Chicken and Sauce
Return the chicken breasts to the skillet, spooning some of the sauce and mushrooms over the top. Cover and let it simmer for an additional 10-15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Finish and Serve
Once cooked, remove from heat and stir in the chopped fresh parsley. Serve the chicken Marsala hot with the sauce and mushrooms poured over the top.
