Prepare the Garlic
Preheat your oven to 400°F (200°C). Peel the garlic cloves and wrap them in aluminum foil, drizzling with a little EVOO. Seal the foil and roast in the oven for about 30 minutes until soft and fragrant.

Cook the Sausage
In a large skillet over medium heat, add the mild Italian sausage links. Cook for about 10-12 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and let them rest before slicing.

Prepare the Broccoli Rabe
While the sausage is cooking, bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2-3 minutes until bright green and tender. Remove and immediately plunge into an ice bath to stop cooking. Drain and set aside.

Combine Ingredients
In the same skillet used for the sausage, add 2 tbsp of EVOO. Add the blanched broccoli rabe and sauté on medium heat for about 5 minutes, adding salt, black pepper, and red pepper flakes to taste.

Add Garlic and Sausage
Squeeze the roasted garlic out of its skins into the skillet with the broccoli rabe. Slice the cooked sausage and add it to the skillet as well. Stir everything together and cook for an additional 2-3 minutes until heated through.

Finish with Cheese
Remove from heat and sprinkle with grated Parmigiano-Reggiano cheese. Toss gently to combine and allow the cheese to melt slightly before serving.
