Grate cheeses and herbs
Grate the smoked gouda and Piave coarsely and set aside in a small bowl. Finely snip the chives and chop the parsley; combine and set aside.

Crack the eggs into a medium bowl, add the whole milk, sea salt and freshly ground black pepper. Whisk briskly until yolks and whites are fully combined and slightly frothy (about 15–20 seconds).

Heat a small skillet or griddle over medium-high heat. Brush both sides of sourdough slices with 1 tablespoon olive oil. Add 1 tablespoon unsalted butter to the pan and toast the bread 2–3 minutes per side until golden and crisp. Keep warm on a rack or low oven.

In a medium bowl, whisk lemon juice, white wine vinegar, honey, 0.25 tsp salt and 0.25 tsp black pepper. Slowly whisk in 1 tablespoon extra-virgin olive oil until emulsified. Toss the baby mixed greens with the dressing just before plating.
Make the French Soft Scramble

Heat the pan
Use a nonstick skillet over low to medium-low heat. Add the 2 tablespoons unsalted butter and let it melt, swirling the pan to coat. The butter should foam but not brown.

After about 60–90 seconds of gentle stirring, when the curds are soft and slightly creamy but still quite loose (they will continue to cook off-heat), add about two-thirds of the grated smoked gouda and Piave to the eggs. Continue stirring gently until cheese begins to melt and eggs are soft and custardy. Total cook time should be 2–3 minutes depending on stove and pan.

Arrange the dressed mixed greens beside or atop the toast, and garnish with microgreens or extra chives if using. Serve immediately.
