A dry, carbonated blend of noble and not monk – so – noble grapes. The ideal wine for summer cookouts or holiday gatherings.

Chill all wines, club soda, and serving glasses in the refrigerator at least 1–2 hours before serving so the cocktail stays crisp and carbonated.

If using fresh peaches, peel and puree one small ripe peach; strain to remove fibrous bits. If using store-bought nectar, measure 3 tablespoons.

Half the grapes and lightly bruise a few to release flavor (reserve others for garnish).

In a large chilled pitcher, gently pour 1.5 cups of chilled dry sparkling white wine and 1 cup of chilled dry sparkling rosé. Stir very gently once or twice with a long spoon — avoid vigorous stirring to preserve bubbles.

Combine base wines

Add 2 tablespoons fresh lemon juice, 2 tablespoons fresh orange juice, and 3 tablespoons peach purée to the wine blend. Add 4 dashes of grapefruit or aromatic bitters. Stir gently to integrate the fruit and bitters without flattening the carbonation.

Add fruit accents

Just before serving, add 1 cup chilled club soda to the pitcher and gently fold once to maintain effervescence.

Fill four wine glasses or highball glasses with 1–2 ice cubes each (or serve without ice for traditional sparkling wine service). Divide the halved grapes among the glasses (about 1/4 cup per glass).

Pour the blended sparkling wine evenly into the glasses, leaving a half-inch headspace to avoid overflow. Garnish each glass with a lemon wheel and a mint sprig.

Serve immediately so the drink stays bright and bubbly. If preparing for a crowd, keep additional chilled bottles of sparkling wine and club soda on hand to top up glasses.
