Method
Whipped Goat Cheese
Soften and combine
Let the goat cheese sit at room temperature for 20 minutes so it softens slightly. Place the softened goat cheese in a medium bowl or the bowl of a food processor.
Add liquids and flavor
Add 3 tablespoons milk or cream, 1 tablespoon extra-virgin olive oil, 1 teaspoon lemon zest, 1 teaspoon fresh lemon juice, and 1 teaspoon honey to the goat cheese.
Whip until airy
Using a hand mixer (low to medium) or a food processor, whip the mixture until smooth and airy, about 1 to 2 minutes. Scrape down the sides and continue until no lumps remain. Adjust texture: if too thick add milk 1 teaspoon at a time until spreadable but still holds shape.
Season
Stir in 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Taste and adjust seasoning (more salt or lemon) as needed. Transfer whipped goat cheese to a serving bowl or spread on a shallow platter and smooth the top with a spatula leaving slight peaks for visual appeal.
Hot Honey
Combine ingredients
In a small saucepan combine 1 cup honey, 1 teaspoon red pepper flakes, sliced fresh chile if using, and 1/4 teaspoon kosher salt.
Finish and cool
Remove from heat and stir in 1 teaspoon apple cider vinegar. Taste and add a pinch more salt or red pepper flakes if you want more heat. Let the hot honey cool slightly (5 to 10 minutes). If using fresh chiles you can leave them in the honey or strain them out depending on desired appearance.
Flatbread & Assembly
Prepare flatbreads
Preheat a skillet or grill pan over medium-high heat. Brush both sides of each flatbread lightly with 1 tablespoon olive oil total (split across pieces). Warm each flatbread 1 to 2 minutes per side until pliable and slightly charred in spots. Alternatively, toast in a 425°F (220°C) oven for 4 to 6 minutes.
Garnish and serve
Sprinkle toasted pine nuts or chopped walnuts (about 2 tablespoons total), fresh thyme or oregano leaves, and a pinch of flaky sea salt over the honeyed cheese. Add microgreens or baby arugula on top or to the side if using. Serve immediately with the warm flatbreads for scooping. Leftover hot honey can be refrigerated and warmed gently before reuse.
