Chill glass and ingredients

If possible, chill the serving glass in the refrigerator for 10–15 minutes or fill it briefly with ice water and discard before using. Ensure carbonated water and syrup are cold — cold liquids hold carbonation better and produce a crisper soda.

Measure syrup into the bottom of the chilled serving glass. Typical fountain-ratio starting point is about 1 part syrup to 4 parts carbonated water; this recipe uses 1/2 cup syrup to 2 cups carbonated water. Adjust syrup to taste if you prefer stronger or milder flavor.

Hold a spoon upside-down (back of the spoon facing up) over the syrup and slowly pour the chilled carbonated water down the back of the spoon into the glass. Pour gently to preserve carbonation and reduce foaming. Stop when the liquid reaches about 1/2 inch below the rim to leave room for garnish and ice if used.

Stir very gently with the spoon for 3–5 revolutions to combine syrup and carbonated water evenly. Avoid vigorous stirring to keep the soda fizzy.

If you want your soda cold immediately, add 1 cup of ice cubes to the glass after combining the soda base. Note: ice will dilute the drink slightly as it melts. Alternatively, use chilled glass and no ice for undiluted flavor.

Squeeze a lemon or lime wedge lightly over the soda if using, then drop the wedge into the glass for a fresh citrus note.

Garnish with a maraschino cherry and/or a mint sprig if desired. Serve with a straw or long spoon.

Taste and adjust: if the soda tastes too weak, add up to 1–2 tablespoons more syrup and stir gently. If too sweet, top up with a few tablespoons of carbonated water.
