Turkey & Cheddar Sandwich

Prepare bread

Lightly butter one side of each slice of bread (1 tsp total). The buttered side will be the outside if you choose to toast the sandwich; if eating cold, butter adds flavor and prevents sogginess.

Spread condiments

On the unbuttered side of one slice spread the mayonnaise (1 tsp). On the unbuttered side of the other slice spread the Dijon mustard (1/2 tsp).

Assemble sandwich

Layer the turkey slices evenly on the mayonnaise side (3 oz). Top with the cheddar slice, tomato slices (2), and leaf lettuce (1). Sprinkle the tomato with 1/8 tsp salt and 1/16 tsp black pepper. Close the sandwich with the mustard-spread bread slice, buttered side out.

Toast (optional)

If you prefer a warm sandwich, heat a skillet over medium heat. Place sandwich in skillet and press gently with a spatula. Cook 2–3 minutes per side until bread is golden and cheese is slightly melted. If not toasting, cut sandwich in half and serve.

Mediterranean Chickpea Salad (side)

Prepare chickpeas and vegetables: Drain and rinse the canned chickpeas (1 cup). Dice 1/2 cup cucumber, halve 1/2 cup cherry tomatoes, finely dice 2 tbsp red onion, and halve 2 tbsp kalamata olives.

Make dressing: In a small bowl whisk together 1 tbs extra-virgin olive oil, 1 tbs lemon juice, 1/2 tsp red wine vinegar, 1/4 tsp dried oregano, 1/4 tsp salt, and 1/8 tsp black pepper until combined.

Combine salad: In a mixing bowl combine chickpeas, cucumber, tomatoes, red onion, olives, and 2 tbsp chopped parsley. Pour the dressing over the mixture and toss to coat.

Finish and rest: Gently fold in 2 tbsp crumbled feta if using. Taste and adjust seasoning with additional salt or lemon juice if needed. Let the salad rest 5–10 minutes at room temperature to allow flavors to meld before serving.

Plating & Serving

Arrange the sandwich on a plate alongside a generous scoop (about 1 cup) of the chickpea salad. Add optional potato chips or crisp veggie sticks (1 cup) and a pickle spear (1) on the side if desired.

Serve immediately. If sandwich was toasted, let rest 1 minute before cutting to avoid hot filling spilling.
