Chill glass

Place an old-fashioned or rocks glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to chill the glass.

Prepare smoked salt rim (optional)

If using smoked sea salt, spread the salt on a small plate. Moisten the rim of the chilled glass with a lemon wedge and gently press the rim into the salt so a thin ring adheres. Return glass to freezer or set aside with fresh ice.

Mixing

Combine spirits and modifiers

In a mixing glass add 2 oz Scotch, 0.5 oz dry vermouth, 0.5 oz chamomile liqueur (or chamomile-honey syrup), 0.5 oz fresh lemon juice, 0.25 oz ginger syrup, 2 dashes Angostura bitters and 1 dash hopped or grapefruit bitters.

Add hopped IPA

Pour 1 oz fresh hopped IPA into the mixing glass. The IPA should be fresh and slightly carbonated; gently pour down the side so you retain moderate effervescence without excessive foaming.

Add ice and stir

Add large ice cubes to the mixing glass (or use 3 large cubes). Stir the mixture gently for 20–30 seconds until well chilled and slightly diluted. The goal is a silky, chilled texture without over-dilution.

Finish & Serve

Strain

Double-strain the cocktail into the chilled old-fashioned glass over one large clear ice cube or into the prepared salt-rimmed glass with fresh ice, using a Hawthorne and fine-mesh strainer to remove any small solids or foam.

Aroma boost (optional)

If desired, spritz a quick IPA spray (a few sprays from a small atomizer filled with IPA) over the top for a hop-forward aroma, or express the oils of the lemon peel over the drink and rub the rim with the peel.

Garnish

Twist the lemon peel over the cocktail to release oils, then drop it in. Add a small fresh or dried hop cone or a rosemary sprig for visual and aromatic hop-like notes. If you used smoked salt, present the smoky-hop interplay to the drinker.

Serve

Serve immediately. Sip slowly to enjoy the layered interplay of smoky malt, hop bitterness and citrus-herbal notes.
