Prepare bread

Preheat a heavy skillet or griddle over medium-high heat. Brush both sides of the bread slices lightly with olive oil (about 1 tsp total). Toast in the skillet 1–2 minutes per side until golden and crisp; alternatively, use a toaster and then warm briefly in a skillet with butter.

Once toasted, immediately spread 1/2 tablespoon unsalted butter on each warm slice so it melts into the bread. Set aside on a plate.

Whisk eggs

Crack 3 large eggs into a bowl, add 2 tablespoons whole milk or cream, and whisk until fully combined and slightly frothy. Season with 1 teaspoon fine sea salt and 1/4 teaspoon freshly ground black pepper.

Cook gently

Place a nonstick skillet over low heat and add 1 tablespoon unsalted butter. When the butter is foamy but not browned, pour in the egg mixture. Using a silicone spatula, stir gently and continuously, scraping the bottom and sides, keeping the eggs moving. Cook slowly for about 3–5 minutes until curds are soft and creamy but moist — remove from heat a touch before fully set because they will continue to cook from residual heat.

Taste and adjust seasoning if necessary. Transfer eggs to a bowl and keep warm while assembling the toast.

Avocado & Toppings

Prepare avocado

Halve and pit the ripe avocado. Scoop the flesh into a bowl and mash gently with a fork until slightly chunky. Stir in 1 teaspoon fresh lime juice and 1/4 teaspoon coarse flaky salt. Taste and adjust with a pinch more salt or lime if needed.

Assemble toast

Divide the mashed avocado evenly between the two buttered toast slices and spread to the edges. Spoon the soft scrambled eggs on top of the avocado, dividing evenly.

Add fresh toppings

Top each toast with thinly sliced radishes (about 1–2 per slice), thin slices of 1/2 a fresh chile (remove seeds if you want less heat), and scatter 1 tablespoon microgreens or chopped cilantro over both toasts.

Finish & serve

Drizzle about 1/2 teaspoon honey over both toasts (approximately 1 teaspoon total), sprinkle a small pinch of flaky salt and a light grind (1/8 teaspoon) of black pepper. Serve immediately while eggs are warm.
