Select and measure

Choose the shredded cheese option you want to add (Cheddar, Monterey Jack, Mozzarella, Pepper Jack, or Mexican blend). Measure 1 cup of the selected shredded cheese per serving batch (quantity shown is for 1 cup; scale as needed for more servings).

Freshly shred (optional)

If using a block of cheese rather than pre-shredded, break off approximately 4 ounces (about 1 cup) and shred it on the large holes of a box grater or with a food processor. Freshly shredded cheese melts better because it lacks anti-caking agents.

Temperature tip

If adding to a hot dish, let the dish settle for 30–60 seconds off the heat so the cheese melts evenly and doesn't seize up. If adding cold to a salad or cold side, use directly.

Combine and season

If you want a seasoned cheese blend, gently toss the shredded cheese with the chopped cilantro and sliced green onions. Add cracked black pepper and paprika to taste and mix lightly so the herbs and spices distribute evenly.

Applying to hot sides

For hot sides (mashed potatoes, baked potatoes, steamed vegetables, rice, beans, etc.), sprinkle the measured shredded cheese evenly over the surface while the side is still hot. Cover the dish with a lid or foil for 1–2 minutes to trap heat and encourage even melting, then remove and stir or serve as-is.

Applying to cold sides

For cold sides (salads, cold slaws, chilled grain salads), add the shredded cheese directly and fold gently to distribute. If using hot sauce, drizzle sparingly and mix to taste.

Finish with an optional light sprinkle of paprika, an extra crack of black pepper, and a few more chopped cilantro leaves or green onion slices for color and aroma. Serve immediately.
