    Make the Sorbet Base

    In a saucepan, combine water and sugar over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let cool.

    Add Lemon Juice and Salt

    Once the sugar mixture has cooled, add the lemon juice and salt. Stir well to combine.

    Prepare the Fruit

    Choose your seasonal fruit and purée it in a blender until smooth. If using strawberries, hull them first; for mangoes, peel and chop; for peaches, pit and slice.

    Combine Fruit with Sorbet Base

    Mix the fruit purée with the sorbet base until well blended.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 2 hours, or until it’s thoroughly chilled.

    Freeze the Sorbet

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a sorbet consistency.

    Serve

    Once the sorbet is fully frozen and has a smooth texture, scoop and serve in bowls or cones.
