    Roast the Peppers

    Preheat your oven to 400°F (200°C). Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking sheet. Roast for about 20 minutes until the skin is blistered and the peppers are soft. Remove from the oven and let cool.

    Prepare the Garlic and Pine Nuts

    While the peppers are roasting, heat a small skillet over medium heat. Add the pine nuts and toast them for about 3-5 minutes until golden brown. Be careful not to burn them. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.

    Blend the Ingredients

    Once the peppers are cool enough to handle, peel off the skin. In a food processor, combine the roasted peppers, feta cheese, toasted pine nuts with garlic, olive oil, red pepper flakes, salt, and black pepper. Blend until smooth and creamy.

    Garnish and Serve

    Transfer the spicy red pepper and feta mixture to a serving bowl. Drizzle with additional olive oil if desired, and sprinkle with fresh parsley. Serve with bread, crackers, or vegetables.
