In a food processor, combine the green chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until well combined but still chunky.

Form the Falafel
Using your hands, shape the mixture into small balls or patties. Place them on a baking sheet lined with parchment paper.

Chill
Refrigerate the falafel for at least 30 minutes to help them hold their shape during cooking.

Prepare Pickled Onions
In a small bowl, combine sliced red onion, apple cider vinegar, and a pinch of salt. Let sit for at least 20 minutes.

Cook the Falafel
Preheat oven to 400°F (200°C). Bake the falafel for about 25-30 minutes, flipping halfway through, until golden and crispy.
