    Prepare the Falafel Mixture

    In a food processor, combine the green chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until well combined but still chunky.

    Add Mushrooms

    In a skillet, heat olive oil over medium heat. Add the finely chopped mushrooms and sauté until they are soft and any liquid has evaporated, about 5 minutes. Allow to cool slightly and then mix into the chickpea mixture.

    Form the Falafel

    Using your hands, shape the mixture into small balls or patties. Place them on a baking sheet lined with parchment paper.

    Chill

    Refrigerate the falafel for at least 30 minutes to help them hold their shape during cooking.

    Prepare Pickled Onions

    In a small bowl, combine sliced red onion, apple cider vinegar, and a pinch of salt. Let sit for at least 20 minutes.

    Make Feta Dressing

    In a bowl, mix together the crumbled feta, Greek yogurt, lemon juice, and a little water to reach desired consistency. Blend until smooth.

    Cook the Falafel

    Preheat oven to 400°F (200°C). Bake the falafel for about 25-30 minutes, flipping halfway through, until golden and crispy.

    Prepare Cucumber Salad

    In a bowl, combine diced cucumber with a pinch of salt and pepper. Toss to combine.

    Serve the falafel warm, topped with pickled onions, cucumber salad, and drizzled with feta dressing.
