Prepare the Polenta
In a saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt and slowly whisk in 1 cup of polenta. Reduce heat to low and cook, stirring frequently, for about 20 minutes until thickened. Stir in half of the grated parmesan and set aside.

Sauté the Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the shrimp and cook for 2-3 minutes on each side until they turn pink.

Add Tomatoes and Romesco
Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they soften. Stir in 1 cup of romesco sauce and mix until the shrimp are well coated.

Serve
To serve, spoon the creamy polenta onto plates, top with the sautéed shrimp mixture, and sprinkle with the remaining parmesan cheese and sliced almonds. Season with black pepper to taste.
