Roasting the Potatoes
Preheat the oven to 425°F (220°C). Wash and dry the fingerling potatoes, then cut them in half lengthwise. In a large bowl, toss the potatoes with olive oil, salt, and black pepper until evenly coated.

Baking
Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.

Preparing the Chimichurri
While the potatoes are roasting, prepare the chimichurri. In a small bowl, combine chopped capers, dill, mint, minced garlic, and red wine vinegar. Stir to combine and set aside.

Serving
Once the potatoes are done roasting, remove them from the oven and transfer to a serving platter. Drizzle the chimichurri over the warm potatoes and serve immediately.
