Method
Cooking Directions
- 1
- 2
Cook the Chorizo
In a large skillet, heat olive oil over medium heat. Add chopped chorizo and cook until browned, about 5-7 minutes.
- 3
Add Garlic and Tomatoes
Add minced garlic and cherry tomatoes to the skillet. Sauté until the tomatoes begin to burst and release their juices, about 3-4 minutes.
- 4
Deglaze with Wine
Pour in the white wine and bring to a simmer, scraping any bits off the bottom of the skillet. Allow the wine to reduce slightly, about 3-4 minutes.
- 5
Incorporate Clams
Add the clams to the skillet, cover, and cook until they are heated through and the clams have opened (if using fresh), about 5 minutes.
- 6
- 7
Prepare Bread Crumbs
In a separate bowl, mix bread crumbs with tarragon. Toast lightly if desired for added flavor.
- 8
Serve
Plate the linguine and clams, and top with the toasted tarragon bread crumbs before serving.
