Linguine and Clams Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Linguine

In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente. Drain and set aside.

  2. 2

    Cook the Chorizo

In a large skillet, heat olive oil over medium heat. Add chopped chorizo and cook until browned, about 5-7 minutes.

  3. 3

    Add Garlic and Tomatoes

Add minced garlic and cherry tomatoes to the skillet. Sauté until the tomatoes begin to burst and release their juices, about 3-4 minutes.

  4. 4

    Deglaze with Wine

Pour in the white wine and bring to a simmer, scraping any bits off the bottom of the skillet. Allow the wine to reduce slightly, about 3-4 minutes.

  5. 5

    Incorporate Clams

Add the clams to the skillet, cover, and cook until they are heated through and the clams have opened (if using fresh), about 5 minutes.

  6. 6

    Combine with Linguine

Add the cooked linguine to the skillet, tossing to combine. Season with salt and pepper to taste.

  7. 7

    Prepare Bread Crumbs

In a separate bowl, mix bread crumbs with tarragon. Toast lightly if desired for added flavor.

  8. 8

    Serve

Plate the linguine and clams, and top with the toasted tarragon bread crumbs before serving.
