Cooking Instructions

  1. 1

    Prepare the Branzino

Clean and gut the branzino fish, then rinse under cold water. Pat dry with paper towels.

  2. 2

    Make the Stuffing

In a bowl, combine the cherry tomatoes, capers, black olives, chopped parsley, juice of half the lemon, salt, and black pepper. Mix well.

  3. 3

    Stuff the Fish

Gently stuff the mixture into the cavity of each branzino. Drizzle olive oil over the fish and season with more salt and pepper.

  4. 4

    Grill the Fish

Preheat the grill to medium-high heat. Place the stuffed branzino on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and flakes easily.

  5. 5

    Prepare Stewed Peppers & Onions

While the fish is grilling, slice bell peppers and onions. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the peppers and onions, season with salt and pepper, and sauté until soft (about 10 minutes).

  6. 6

    Serve

Once the fish is done, remove it from the grill. Serve the grilled branzino alongside the stewed peppers and onions, garnishing with lemon wedges.
