    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and reduce to a simmer. Cook for about 45 minutes or until tender. Drain and let cool.

    Make the Saffron Aioli

    In a bowl, combine mayonnaise, minced garlic, lemon juice, saffron strands (soaked in a little warm water), salt, and black pepper. Mix well and set aside.

    Prepare the Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15 minutes. Drain, let cool, and slice in half.

    Breading the Octopus

    Cut the cooked octopus into tentacle pieces. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each piece of octopus in flour, dip in eggs, and coat with breadcrumbs.

    Fry the Octopus

    In a large skillet, heat the olive oil over medium-high heat. Fry the breaded octopus pieces until golden and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the fried octopus with sliced fingerling potatoes, mixed olives, capers, and saffron aioli on the side.
