Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface to about 1/8 inch thick. Cut into squares or circles.

Assemble the Cheese Bites
Place a small piece of Brie cheese in the center of each pastry cut-out. Top with a teaspoon of cranberry sauce, a few walnut pieces, and a drizzle of honey. Sprinkle fresh rosemary, sea salt, and black pepper on top.

Bake
Fold the pastry over the filling to create a pocket and seal the edges with a fork. Brush the tops with olive oil. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.

Serve
Let cool slightly before serving. Arrange on a platter with apple slices and additional cranberry sauce for dipping.
