Dough Preparation
Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
Mix the Dough
In a large bowl, mix the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape and Second Rise
Once the dough has risen, punch it down and divide it into small balls. Shape each ball into a round disc and let them rest for another 30 minutes.
Cook the Fouée
Preheat a pizza stone or baking sheet in the oven at 450°F (230°C). Bake the discs for about 5-7 minutes until puffed and lightly browned.
