Prepare the Ingredients

Chop the chicken breast, shiitake mushrooms, and green onions into small pieces. If using raw shrimp, peel and devein them.

Make the Egg Mixture

In a mixing bowl, beat the eggs gently and add the dashi stock, soy sauce, mirin, and salt. Mix until well combined.

Prepare the Cups

In individual chawanmushi cups or small ramekins, place an equal amount of the chopped chicken, shiitake mushrooms, green onions, and shrimp at the bottom.

Add the Egg Mixture

Pour the egg mixture over the ingredients in the cups, filling them about 3/4 full.

Steam the Custard

Cover each cup with aluminum foil to prevent water from dripping into the custard. Place the cups in a steamer over simmering water and steam for about 15-20 minutes, or until the custard is set.

Serve

Carefully remove the cups from the steamer. Let them cool slightly before serving. Enjoy your chawanmushi warm.
