Prepare the Tomatoes
Chop the garden tomatoes into small pieces and place them in a bowl. Sprinkle with a pinch of salt and let them sit for about 10 minutes to draw out some moisture.

Roast the Tomatoes
Preheat your oven to 400°F (200°C). Spread the chopped tomatoes on a baking sheet lined with parchment paper and roast for 20-25 minutes, or until they are caramelized and slightly dried.

Make the Butter
In a mixing bowl, soften the unsalted butter. Add the roasted tomatoes, brown sugar, sea salt, fresh basil, and black pepper. Mix until well combined.

Chill the Butter
Transfer the tomato butter to a piece of parchment paper or plastic wrap. Roll it into a log shape and twist the ends to seal. Refrigerate for at least 1 hour or until firm.

Serve
Once the butter is firm, slice it into rounds and serve it on warm bread, grilled vegetables, or as a topping for meats.
