    Prepare the Spaetzle Batter

    In a mixing bowl, combine the flour, eggs, milk, and salt. Whisk until you have a smooth batter.

    Cook the Spaetzle

    Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander, drop small amounts of batter into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Caramelize the Onions

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan. Add the sliced onion to the skillet and cook on low heat, stirring occasionally, until caramelized, about 15-20 minutes.

    Make the Bacon Butter

    Once the onions are caramelized, add the butter to the skillet along with the chopped bacon. Stir until the butter is melted and everything is well combined.

    Combine and Serve

    Add the cooked spaetzle to the skillet with the bacon butter and onion mixture. Toss to coat the spaetzle evenly. Season with pepper and garnish with chopped parsley before serving.
