Make the Dough
In a mixing bowl, combine all-purpose flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead the dough for 5 minutes until smooth. Cover and let it rest for 30 minutes.

Prepare the Filling
In a separate bowl, mix ricotta cheese, lemon zest, and sugar until well combined. Set aside.

Assemble the Seadas
Roll out the dough to a thickness of about 1/8 inch. Cut into circles (about 4 inches in diameter). Place a tablespoon of filling in the center of each circle. Fold the dough over the filling and seal the edges, pressing firmly.

Fry the Pastries
In a large skillet, heat oil over medium heat. Fry each seada for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
