Fritter Preparation

Prepare the Mixture
In a large bowl, combine the grated potatoes, chopped sauerkraut, grated onion, flour, beaten eggs, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Heat the Oil
In a large skillet, heat vegetable oil over medium heat. You want enough oil to cover the bottom of the skillet.

Form the Fritters
Using a spoon or your hands, scoop out a portion of the potato mixture and form it into a patty. Repeat until all the mixture is used.

Fry the Fritters
Carefully place the patties in the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and crispy.

Drain and Serve
Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm.
