Prepare the Sea Bass
Preheat your oven to 400°F (200°C). Clean the sea bass and make sure it is scaled and gutted. Rinse it under cold water and pat it dry with paper towels.

Make the Salt Crust
In a large bowl, combine the coarse sea salt with the egg whites and mix until the salt is slightly damp and holds together when squeezed.

Wrap the Fish
On a baking tray, spread half of the salt mixture to form a base. Place the sea bass on top, then cover it completely with the remaining salt mixture, pressing down to form a solid crust.

Bake the Fish
Bake in the preheated oven for about 25-30 minutes. The salt crust will harden and form a protective shell.

Serve
Once baked, carefully crack open the salt crust with a mallet or the back of a spoon. Remove the salt, and carefully lift the fish onto a serving platter. Serve with a drizzle of olive oil and additional lemon slices.
