Red Wine Poached Pears Recipe
It’s a simple but sexy dessert (and it’ll make your house smell amazing). This classic French dessert originated in Burgundy, and this technique works best if the pears are unripe as they hold up better when poaching in the hot liquid.

Directions
- 1
Prepare the Poaching Liquid
In a medium saucepan, combine the red wine, granulated sugar, cinnamon stick, star anise, and the split vanilla bean (scrape the seeds into the pot and add the pod). Stir over medium heat until the sugar has dissolved.
- 2
Prepare the Pears
While the poaching liquid is heating, peel the pears, leaving the stems intact. Cut a small slice off the bottom of each pear to help them stand upright in the pot.

Cool the Pears
Carefully remove the pears from the poaching liquid and place them upright in a serving dish. Allow the poaching liquid to simmer uncovered for an additional 10-15 minutes, until it reduces and thickens slightly.

Serve
Pour the reduced poaching liquid over the pears and drizzle with lemon juice. Serve warm or chilled, as desired.
