    Prepare the Bavarois

    In a saucepan, combine the chopped ramps, heavy cream, milk, sugar, and salt. Heat over medium heat until just simmering. Remove from heat and let steep for 15 minutes.

    Soak the gelatin sheets in cold water for about 5 minutes until softened. Squeeze out excess water and add the softened gelatin to the warm ramp mixture. Stir until the gelatin is fully dissolved.

    Strain the mixture through a fine sieve into a bowl to remove the ramp solids. Allow it to cool slightly before pouring it into serving molds.

    Refrigerate the molds for at least 4 hours, or until set.

    Prepare the Red Prawn Crudo

    In a bowl, combine the peeled and deveined red prawns with lemon juice, olive oil, and a pinch of salt. Mix gently and let it marinate for about 10 minutes.

    Once the Bavarois is set, carefully unmold it onto a serving plate.

    Top the Bavarois with the marinated red prawns and garnish with microgreens.
