Cooking Instructions

  1. 1

    Preparation of Ingredients

Start by preparing all your ingredients. Peel and devein the prawns, chop the onion, mince the garlic, slice the olives, and prepare the caramelized oranges.

  2. 2

    Sauté the Aromatics

In a tagine or heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

  3. 3

    Add Spices

Add the ground cumin, coriander, and paprika to the pot. Stir well to coat the onions and garlic with the spices, cooking for about 2 minutes until fragrant.

  4. 4

    Incorporate Tomatoes and Simmer

Pour in the crushed tomatoes and add salt and black pepper to taste. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld.

  5. 5

    Add Olives and Prawns

Stir in the sliced olives and add the prawns to the tagine. Cook for an additional 5-7 minutes, or until the prawns are pink and cooked through.

  6. 6

    Finish with Caramelized Oranges

Gently fold in the caramelized orange slices and chopped fresh coriander. Let it heat through for another 2 minutes.

  7. 7

    Serve

Serve the prawn tagine hot directly from the tagine, garnished with additional coriander if desired.
