    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

    Cook the Leeks

    While the potatoes are boiling, slice the leeks and sauté them in butter over medium heat until soft, about 5-7 minutes. Set aside.

    Make the Filling

    Mash the boiled potatoes in a bowl. Mix in the sautéed leeks, heavy cream, parmesan cheese, salt, and black pepper until well combined. Allow the mixture to cool completely.

    Form the Croquettes

    Once the filling is cool, shape it into small balls or cylinders. Dredge each croquette in flour, dip in beaten eggs, and coat with breadcrumbs.

    Fry the Croquettes

    Heat the oil in a deep skillet over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
