    Prepare the Potato Mixture

    In a large pot, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and allow to cool slightly. Mash the potatoes until smooth.

    Cook the Leeks

    In a skillet, heat a tablespoon of oil over medium heat. Add the chopped leeks and cook until softened, about 5 minutes. Stir into the mashed potatoes.

    Form the Croquettes

    Add flour, beaten eggs, salt, and black pepper to the potato mixture. Mix until combined. Shape the mixture into small balls or patties.

    Coat the Croquettes

    Roll each croquette in breadcrumbs until fully coated.

    Fry the Croquettes

    In a deep pot, heat vegetable oil to 180°C (350°F). Fry the croquettes in batches until golden brown, about 3-4 minutes. Drain on paper towels.
