    Prepare the Porcini

    Soak the dried porcini mushrooms in warm water for about 30 minutes until they are softened. Drain and chop them finely.

    Sauté the Vegetables

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and radicchio, and sauté until the onion is translucent and the radicchio is wilted, about 5-7 minutes.

    Combine Ingredients

    Add the chopped porcini mushrooms, brown sugar, balsamic vinegar, salt, black pepper, and thyme leaves to the saucepan. Stir well to combine.

    Cook the Marmalade

    Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 20-25 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

    Cool and Store

    Remove the marmalade from the heat and let it cool. Transfer it to a clean jar and store in the refrigerator. Enjoy as a starter with bread or cheese.
