Preparation Steps
- 1
Prepare the Plums
Preheat the oven to 400°F (200°C). In a large skillet over medium heat, melt the butter with the sugar until it begins to caramelize, about 5 minutes.
- 2
Caramelize the Plums
Add the halved plums and thyme leaves to the skillet, stirring gently to coat them in the caramel. Cook for an additional 5-7 minutes until the plums soften slightly.
- 3
Assemble the Tart
Remove from heat and carefully arrange the plums in a single layer at the bottom of the skillet. Sprinkle with salt.
- 4
Top with Puff Pastry
Roll out the puff pastry on a floured surface to fit the size of the skillet. Place the pastry over the plums, tucking the edges down around the fruit.
- 5
Bake the Tart
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
- 6
Invert and Serve
Remove the tart from the oven and allow it to cool for 5 minutes. Carefully invert it onto a serving plate so the plums are on top. Serve warm or at room temperature.
