Preparation Instructions
- 1
Make the Dough
In a large bowl, mix the flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- 2
Prepare the Cheese Filling
In a mixing bowl, combine the softened goat cheese, grated Parmesan, chopped herbs, and black pepper. Mix until well blended and set aside.
- 3
Assemble the Galettes
Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles (about 4 inches in diameter). Place a tablespoon of the cheese mixture in the center of each circle. Fold the edges of the dough over the filling, leaving the center exposed.
- 4
Bake the Galettes
Place the galettes on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
