Pots de Crème

Method

Preparation

  1. 1

    Prepare the Oranges

Cut the tops off the oranges and carefully scoop out the flesh, leaving a hollow shell. Set aside.

  2. 2

    Melt the Chocolate

In a heatproof bowl, melt the milk chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Heat the Cream and Milk

In a saucepan, combine the heavy cream and whole milk. Heat over medium heat until just simmering, then remove from heat.

  4. 4

    Mix Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until well combined.

  5. 5

    Combine Mixtures

Slowly pour the warm cream and milk mixture into the egg yolk mixture, whisking constantly to prevent curdling. Once combined, stir in the melted chocolate until smooth.

  6. 6

    Bake the Pots de Crème

Pour the chocolate mixture into the hollowed-out orange shells. Place the oranges in a baking dish and fill the dish with hot water halfway up the sides of the oranges. Bake at 150°C (300°F) for 30 minutes, or until set.

  7. 7

    Cool and Serve

Remove from the oven and let cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.
