Soak the Beans
Rinse the gigante white beans under cold water and soak them in a large bowl of water for at least 8 hours or overnight.

Cook the Beans
Drain and rinse the soaked beans. In a large pot, cover the beans with fresh water and bring to a boil. Reduce the heat and simmer for about 1 hour, or until the beans are tender. Drain and let cool.

Prepare the Marinade
In a mixing bowl, whisk together olive oil, red wine vinegar, minced garlic (from the 3 cloves), salt, and black pepper.

Combine Ingredients
In a large bowl, combine the cooked gigante beans, halved cherry tomatoes, and the marinade. Add the fresh rosemary sprigs and mix gently to combine.

Cover the bowl with plastic wrap and let the beans marinate in the refrigerator for at least 2 hours, preferably overnight, allowing the flavors to meld.
