Preheat your oven to 375°F (190°C). Trim the ends of the endive and separate the leaves carefully. Wrap each endive leaf with a slice of ham, securing it if necessary with a toothpick.

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until golden. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the sauce thickens, about 5-7 minutes. Remove from heat, then stir in the grated cheese, salt, black pepper, and nutmeg until melted and smooth.

In a baking dish, arrange the ham-wrapped endives side by side. Pour the béchamel sauce evenly over them, ensuring they are well covered. Sprinkle breadcrumbs on top for a crunchy finish.
