Prepare the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until foamy. Then add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.

Shape the Fougasse
Once risen, punch down the dough and turn it onto a floured surface. Divide the dough into two equal portions. Flatten each portion into an oval shape, about 1/2 inch thick.

Create the Design
Using a sharp knife or kitchen scissors, cut slits into the dough to create a leaf design, making sure not to cut all the way through. Gently stretch the dough to open up the cuts.

Second Rise
Transfer the shaped dough onto a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

During the second rise, preheat the oven to 425°F (220°C).
